The esters deliver aromas of ripe black cherries, violets and cloves; the tongue will be coated by generous body components and the smooth tannins provide an extremely long and enjoyable finish.
This year’s blend contains 20% Merlot to add a little structure and discipline to the
Cabernet Sauvignon and is a staple in Super-Tuscan style blends. “Super Tuscan” is a term used
to describe wines produced in Italy that do not adhere to the strict wine laws of that country.
These bolder bodied wines were first created in the 1970s when Italian winemakers wanted to experiment with creating other types of wines besides Chianti. These wines are created by merging combinations of Cabernet, Merlot and Sangiovese grapes. As a result of their variety, they easily pair with a wide range of food.
Food Pairing Notes
Try our wine with a substantial seafood stew such as a cioppino or a meaty swordfish grilled with onions and capers. If you’re thinking of a vegetarian dish, try cannelloni beans with garlic and rosemary or any vegetable pasta dish with deep, complex flavors.
