After the manual harvest and a double selection of the grapes, the juice was fermented in 3,000 litres tronco-conical vats and goes through a malolactic fermentation in new French oak barrels in which it is aged for 14 months.
The 2015 Celsus wine is composed of 100% Tinta de Toro grapes, (elsewhere known as Tempranillo). Celsus, Bodegas Vetus’ highest level wine, whose name translates to “Above All” is composed of grapes that come from low-yielding pre-phylloxera bush vines grown in a small 100+ year old vineyard.
